Strawberries for strawberry lovers!
This recipe is so simple and really easy to make, my little niece took these to a party and everyone raved about these strawberries. This recipe is definitely a keeper!
If you find the strawberries are a little wobbly with the stems left on, cut the green stems off so the strawberries will stand upright when placed on your serving tray.
With a small sharp knife, cut an “X” into each strawberry, starting at the top of the strawberry and cutting down almost to the bottom of the strawberry. (The cut should be such that the strawberry will open up but not fall apart.) Gently, with your fingertips, spread each strawberry apart to make “petals”. Set aside while you make the cream filling. In a medium sized bowl, beat the fresh cream till stiff and sweeten (with icing sugar) as desired.
Place the cream into a pastry bag fitted with a large star tip. Starting at the bottom of the strawberry, pipe the cream into each strawberry. If not serving immediately, cover, and place in the refrigerator until serving time.
These are perfect as a mini dessert on its own or even as a cake decoration
Cheesecake filled strawberries
2 to 3 cups of medium to large strawberries
1 cup of cream cheese
3/4 cup powdered sugar
1 tsp almond extract
Wash and dry your strawberries.
Soften the cream cheese and mix the powdered sugar and almond extract into it. Set aside.
Using a knife, slice the strawberry as mentioned above. Fill a pastry bag with the filling and, using the star tip, fill each strawberry with the cream cheese mixture.
These can also be drizzled with chocolate or even half-filled and then chocolate dipped.
